Coconut balls

crispy outside and soft inside

P1040512  Nutritional tips at the end of recipe.

On Sunday I decided to make a nice tray of pastries for the end of a lunch with my whole family. I made the lady’s kisses, “sweet flowers” and tart pastry, cream puffs, and then … I advanced 2 egg whites. With only the egg whites you can prepare a lot of recipes, and these pastries with coconut, a bit exotic, are among my favorites. In addition, these balls are totally gluten-free and dairy-free!

The recipe that I propose is simple and fast, suggested by the pastry chef Maurizio Santin, in his book “Shortbread”.

Preparation time: 10 minutes – Cooking time: 10-15 minutes – Difficulty: Easy

Ingredients (for about 10-15 balls) :

2 egg whites
150g  sugar
150g coconut flour

With a wooden spoon or a spatula, mix egg whites and sugar in a double boiler. Then add the coconut flour and continue stirring (photo 1) .

Then work with your hands until the mixture is hot, about 50°C (the mixture will stick to your fingers :-)). Remove from the water bath and preheat the oven to 200 ° C. Then prepare balls with your hands and bake (photo 2) .

Will be ready when they begin to color, crispy outside and soft inside!

Great toghether with a cup of tea, with an exotic flavor…hot or cold!

Nutrition Tips: … and now we see what are the virtues of coconut 🙂  This is a fruit “friend” of liver, digestive system, brain, bladder, immune system, nervous system and bones. Particularly rich in potassium and lipids, pour of vitamins, while there are other minerals such as calcium, phosphorus and iron. sing the dried kind, you will lose a significant proportion of the water and then rise a bit in calories. It’s refreshing and digestible, suitable for those who do sports .

This recipe is gluten-free and dairy-free.
