On Sunday I decided to make a nice tray of pastries for the end of a lunch with my whole family. I made the lady’s kisses, “sweet flowers” and tart pastry, cream puffs, and then … I advanced 2 egg whites. With only the egg whites you can prepare a lot of recipes, and these pastries with coconut, a bit exotic, are among my favorites. In addition, these balls are totally gluten-free and dairy-free!

The recipe that I propose is simple and fast, suggested by the pastry chef Maurizio Santin, in his book “Shortbread”.

RECIPE

Preparation time: 10 minutes – Cooking time: 10-15 minutes – Difficulty: Easy

Ingredients (for about 10-15 balls) :

2 egg whites
150g  sugar
150g coconut flour

Preparation:

With a wooden spoon or a spatula, mix egg whites and sugar in a double boiler. Then add the coconut flour and continue stirring (photo 1) .

Then work with your hands until the mixture is hot, about 50°C (the mixture will stick to your fingers :-)). Remove from the water bath and preheat the oven to 200 ° C. Then prepare balls with your hands and bake (photo 2) .
