Crispy cookies…to dunk

with rice flour and brown sugar


As you know breakfast is the most important meal of the day, because it is useful to recharge and set in motion the body,  especially our brain! It’s  important  making a healthy and balanced breakfast every day,  and don’t overdo with saturated fat. In fact, these fats are less digestible and more difficult to ” degrade” by  the enzymes in our body, and then they are deposited where they shouldn’t! These are contained mainly in animal fats , so the tasty American breakfast has to be eaten with moderation, while it’s welcome a nice Italian breakfast 😛

This immediately makes us think about milk , coffee and biscuits! I love cookies, crunchy ones that are dipped in the milk and soak it well! Today I propose a recipe for crispy cookies, thanks to the addition of rice flour, served at breakfast or like a snack with a flavoured cup of tea .


Preparation time: 20 minutes – Cooking time: 20-25 minutes – Difficulty: Easy

Ingredients (for about 50 cookies )

450g flour 00
90g of rice flour
150g butter, softened
180g of sugar
40g brown sugar
160g of milk
1 egg
a sachet of baking powder (16g)
a pinch of salt


Work the butter with both sugars until you obtain a smooth cream (photo 1) .

Add the beaten egg , milk and salt and mix. Add flour and baking powder sifted to avoid lumps (photo 2).

Work slowly the dough until it is smooth, if it is too sticky, add a bit of rice flour (photo 3).

Roll out the dough about 6-7 mm high and cut out cookies with stencils you prefer. Place them in a buttered baking pan or covered with oven paper (photo 4) and cook in the oven for 20-25 minutes at 180 ° C.

When they reach a golden color and they are beautiful puffy, remove from the oven and let cool .

Tip: if you like and if you want to make your cookies even more fragrant you can add, concomitantly with the sugar, a pinch of ginger and a teaspoon of cinnamon. Look forward to remove them from the oven to bite them!

Nutritional curiosity: as I wrote before, do not overdo with the fats of animal origin, but it is wrong to say that fats are unhealthy! Every food is important when consumed with awareness! Fats are important for many functions and structures of the body, for example the cell membranes, made up mostly of lipids.

In addition, the demonized butter is preferable to margarine (unless you are lactose intolerant!), because margarine is produced through an industrial process and rich in trans-fatty acids harmful for our body because they increase bad cholesterol levels.

So , my friends , you can have a bit of butter in the morning, especially since you need energy to start your day. The key word is always DO NOT OVERDO !
