Violet Muffin & Cupcakes with candied fruit

Muffins and cupcakes are very delicious treats that can be enjoyed at breakfast or with a fragrant tea in the afternoon. But .. what’s the difference? Often the term is used for either, but maybe there’s a small distinction! Muffin are a bit bigger and are preferably consumed at breakfast, they also contain plant oils as the fat component, cupcakes, however, are decorated with icing and are smaller than muffin, perfect with the afternoon tea and contain butter.

In both cases, however, we are faced with tiny and nice cakes,  scented and super soft! Unable to resist the temptation to taste it 🙂

I’ve made some of them few days ago for my dad’s birthday and then decorated with sugar paste! Very colorful!

In addition, the color purple and orange muffins cupcakes made ​​me think about the sweets that Harry Potter and his friends are used to eat, in the seven books written by J.K. Rowling (fantastic… I recommend them)!

RECIPE

Preparation 30 minutes – Cooking time 25-30 minutes – Difficulty: Easy

                                    Ingredients for Muffin (about 8 muffins) :

2 medium purple carrots
1 small cooked beetroot (about a tangerine)
75g 00 wheat flour
60ml vegetable oil
1 egg
100g sugar (also integral)
50g finely chopped almonds
25g potatoes starch
half a bag of baking powder ( about 8g )
a teaspoon of vanilla extract

Preparation:

Start by chopping  finely carrots in a food processor with the sugar beet.

Beat eggs with sugar until the mixture is soft and fluffy. Add the carrots and beets , add 00 flour , almonds , potatoes starch and mix well . Combine the sifted baking powder and vanilla,  as the last add seed oil flush and mix well. The dough should be soft, if it is not , add some milk .

Prepare buttered and floured muffin tins and pour in 2 tablespoons of compound.

Bake at 180 ° C for about 25-30 minutes , without opening the oven for the first 20 minutes.

Remove from the oven and let cool before decorating them .

RECIPE

Preparation 20 minutes – Cooking time 25-30 minutes – Difficulty: Easy

Ingredients for the cupcake (about 6 cupcake ) :

1 egg and 1 egg yolk
a pinch of salt
190g flour 00
90g of butter
100g sugar ( also integral)
60g candied fruit to taste (I used papaya that gave me )
a pinch of salt
half a bag of baking powder ( about 8g )
the tip of a teaspoon of baking soda
a teaspoon of vanilla extract
125ml milk

Preparation:

Soft the butter at room temperature and place it in a bowl. Knead it with a wooden spoon and then, when it is very soft, with an electric mixer with the sugar and vanilla. Add the salt , then beat for a few minutes .

Work the eggs with the milk until the mixture is smooth , then pour in the  butter cream. Continue until the texture will be smooth homogeneous , at this point , add the candied fruit.

Add the flour , baking soda and baking powder sifted to avoid lumps and mix well .

Grease and flour the molds and fill for the 3 /4, to avoid that the compound to escape during cooking.

Put them in a preheated oven at 180 ° C for 25-30 minutes. Let cool before decorating them with icing, cream the butter and sugar paste .

And here’s the ones that I did! I decorated them with sugar paste and marzipan … they did a hit!
